Tuesday, February 21 is FAT TUESDAY or MARDI GRAS where people live it up one last time before the Lenten season.

Did you know that Carnival comes from the Latin, "carne" = meat and "levare or [i]vale]/i]" = to take away or to say goodbye. The word literally expresses "to take away meat or to say goodbye to meat, or carnal pleasures." Other etymological explanations have also been accepted on the origins of 'carnival.'

Mardi gras comes the French, "mardi" = Tuesday (similar to 'martes' in Spanish) and 'gras' = fat. Refers to the day of merrymaking before the Lenten season.

We decided to combine a bit of New Orleans with Brazil, making a Creole Jambalaya and serving it with a Brazilian staple of a drink called Caipirinha.

Below is the classic Brazilian drink called Caipirinha made with Cachaca (pronounced ka-sha-sa), which is a clear sugar cane spirit from Brazil. We found our bottle at BevMo in the rum aisle (about $18) as some grocery stores did not carry it. Take a look at the proportions and be forewarned. Enjoy a couple of Caipirinha and you'll be sporting a thong around the house in no time.

Carnival Caipirinha (pictured)
Yields 1 cocktail

1 lime, quartered
4 oz. cacha?ºa (Brazilian sugar cane rum)
2 tsp sugar

Slice the lime into eight pieces and put them in a sturdy tumbler. Add the sugar and crush with a pestle. Pour in the Cachaca and add some ice cubes.

We ended up placing the ingredients into a cocktail shaker as if we were making a martini. Once we vigorously shook the cocktail, we took the top off the shaker to allow for the limes and ice cubes to pour into our tumbler glasses that we rimmed with more lime and sugar.

Creole Jambalaya
Serves 8-10

Creole seasoning (recipe follows)
1 Lb. 26/30 shrimp, peeled, deveined, with the tail on
10 oz chicken, cubed (we used 2 inexpensive chicken thighs)
3 tbsp olive oil
?¢ cup yellow onion, diced (about half a large onion)
?¢ cup green bell pepper, diced (about half a large bell pepper)
?¢ cup celery, diced (about 2 large stalks)
1 cup tomatoes, diced (about 1 large tomato)
2 tbsp minced garlic
6 bay leaves
2 tsp Worcestershire
2 tsp Tabasco (or any Louisiana hot sauce)
1 ?¢ cups long white rice
6 cups chicken stock
12 oz cooked Andouille sausage, sliced on the bias, ?? inch thick (about 4 sausages)
Salt and pepper to taste
Chopped parsley for garnish
I loaf garlic French bread

In a large bowl, combine the shrimp, chicken and about half the Creole seasoning. Toss to coat and set aside. In a large pot, heat the oil over high heat. Quickly add the onions, bell peppers, and celery. Saut?® for about 3-5 minutes, stirring occasionally. Add the tomatoes, garlic, bay leaves, Worcestershire, and hot sauce. Stir to combine. Add the rice and stock. Stir to combine. Bring to a boil and then reduce the heat to medium and allow to cook uncovered for another 10-15 minutes, or until the rice begins to get tender, stirring occasionally. Add the chicken, shrimp, and sausage and cook for about 10 minutes, or until the chicken and shrimp are cooked though. Adjust seasoning with salt, pepper, and the Creole seasoning. Garnish with parsley. Serve in a bowl along with a piece of garlic bread.

Creole Seasoning
Yields 2/3 cup

1 tbsp black pepper
1 tbsp cayenne pepper
1 tbsp dried oregano
1 tbsp dried thyme
1 tbsp onion powder
2 tbsp garlic powder
2 tbsp salt
2 ?¢ tbsp paprika

Combine all the spices together in a small bowl. Remember, you can store what you don't use.
