Not a single trip to the Mall.
This Year I asked my kids, do you want gifts or Tamales?
They chose Tamales.
Tamales are a tradition in our family
Mi mamá, doña Margarita, used to make tamales for us every year.
It took her all day to prepare and cook her delicious Tamalitos.
My mom put so much time and love into cooking tamales for us.
I will carry that tradition till I die
I would like to now share my recipe with you
This recipe makes 50 to 60 tamales:
10 pound of beef or pork
8 pounds of prepared masa
two onions, 5 garlic cloves, salt, pepper, tajin, lemon pepper,
Chiles California dried chile pods
Soak the corn husk in hot water while you prepare other ingredients
Saute the onions and garlic, add beef or pork to pot add five cups of water cook for one to two hours.
Seed the chiles, place in pot with three cups of boiling water, cook for 15 minutes. Let cool, blend in blender.
Once meat is cooked, shred and add blended Chile. Your meat is now ready.
You may add some chile to your prepared masa to add color and spice
Arrange all your ingredients: Meat, Masa, corn husk
Begin to spread the masa on corn husk, place meat in center of corn husk fold in three and begin to place in tamale steamer, place tamales standing up in rows,
