Ceviche Peruano


Many of U have often asked me: Queen of SalSoul, how do U prepare
your CEVICHE?

Well, dear friends of my Kingdom, I will share my secret & tell U how...

CEVICHE PERUANO A LA SALSOUL! by Cecilia No?l, The Queen (and leader of the Wild Clams)

Ingredients for 6 Servings:

9 big fillets of your favorite fish. Mine is Sea Bass or Halibut, chopped in small squares and lightly, but well salted

Squeeze the juice of 25 to 30 limes. Not lemons!

1/2 big Red Onion, chopped long & thin

3 cloves of tiny chopped fresh Garlic

1 teaspoon of fresh tiny chopped Ginger

1/3 bunch of chopped Cilantro

3 or 4 chopped Habaneros, the orangy ones, or the red ones, NO Jalape?os! Warning: they are HOT, so go easy...

Salt & Black Pepper

6 leaves of fresh creole Lettuce

3 cooked or baked Sweet Potatoes, peeled & cut in halves

2 big steamed Corns, cut in 3s, so U'll have your 6 pieces

This Is How U Do It:

Have your fish cleaned, cut and well-salted in a deep long dish, while U mix the lime juice with the garlic, ginger, salt to your taste (start with a 1/4 of a teaspoon), a bit of black pepper and one of the chopped habaneros in a mixing cup or bowl. Mix it all well and throw it on the fish, but make sure the fish is completely covered
with the juice.

To keep it safe, U may cover it lightly with a clean cloth or put it in the refrigerator, but don't cover it with plastic or saran wrap.

Let it marinate for 30 minutes, more or less, until the fish turns white.

Take out and adorn the plate around with the lettuce, the 6 pieces of sweet potatoe and the corn.

Sprinkle and cover the fish with the thin sliced red onion, the rest of the habaneros, if U are brave, and the chopped cilantro.

Serve with a chilled Cerveza Cusque?a, Pilsen or Cristal, from your local Mercado Latino, or, well, a Corona Beer from any 7/11 and for the recovering alcoholics, an Inka Kola soda.
